I got this recipe from Serious Eats. I was wanting to make something light and sweet. This cake sounded like just the thing!

After all the measuring and mixing and pouring and baking, I was a little disappointed. My cakes came out quite thin with very little rise1. The edges were a little crisp. However, the flavor was good and over all the cake has a nice soft texture. There’s a lot of lemon in this recipe and it really comes through. The frosting was almost too sweet for us, but I used a thin layer in the filling and only iced the top of the cake (not the sides) and I think the tartness of the lemon and berries balances it nicely. The cake has a very refreshing flavor and a nice balance of tart and sweet. I also think it’s best served a little on the cold side. Great dessert for summer!

Rating

  • Difficulty: I’m going to call this Intermediate, it does require a stand or hand mixer and homemade frostings can be tricky (mine didn’t come out quite right but tasted ok). Though as baking recipes go, it was not all that difficult
  • Taste: It was good, and I’d make it again but it didn’t knock my socks off
  • Rating: 3.5 out of 5 stars.

 

  1. I think my baking powder might be too old so that could explain the lack-luster rise.

    Nice! I read serious eats too. My google reader has tons of starred recipes I’m too lazy to try. We did try Kenji’s fajitas, but they weren’t very good. Waaay to much soy sauce. And yeah, we never bake enough to have fresh baking powder. We probably have 3 opened boxes around the house…

    Yeah, for every 10 recipes I star in GReader, I probably only make 1. This might be the only recipe from that site that I’ve actually made so far.
